Brauli Rice

I must say, I’m a bit of a fan of Cauliflower Rice!  It’s a fabulous replacement for the carb-loaded grains of ‘normal’ rice or couscous.  This week I had a head of broccoli to use up so I threw it in with the cauliflower … I’m calling it Brauli Rice!  All the benefits of Cauliflower rice with some added green goodness - WINNING!

You can even buy this stuff prepackaged from the supermarket.  But seriously - it’s worth ditching the plastic and price tag to make your own!  I used an entire head of each veggie, froze half, used a quarter to create a mexi-bowl while my family had burritos and the final quarter went into a salad for my husband for lunch the next day.

1 head cauliflower, cut into florets

1 head broccoli, cut into florets

2 tbs coconut oil

  1. In two mixed batches, use a food processor blitz the broccoli and cauliflower
  2. Place half the mixture in a microwave-proof bowl with 1 tbs of the oil and cook on high for 4 minutes
  3. Repeat with all the remaining ingredients
  4. Serve with your favourite curry, tagine, as a base for a poke bowl or whatever your rice-loving heart desires!
