Colours in a bowl


As you’ve probably guessed, I’m a bit of a salad fan.  My go-to salad base is baby spinach, but sometimes it’s nice to change it up.  Eating the rainbow is very on trend at the moment, and when presented in a bowl like this it really does entice the belly via the eyes! Super simple, easy, quick and healthy.  It’s enough on its own, but loves to accompany your favourite BBQ meat too!


PS - I couldn’t help but put a little bit of spinach in!


Ingredients

¼ cup red cabbage, shredded

¼ cup cabbage, shredded

1 small carrot, grated

½ zucchini, grated

¼ baby spinach, shredded

1 small red capsicum, shredded

25 g goats feta, crumbled

1 tbs toasted pepitas

1 tbs apple cider vinegar

1 tbs olive oil

salt and pepper to taste


Method

  1. Arrange all the vegetables nicely in a large, shallow bowl
  2. Sprinkle over feta and pepitas
  3. Dress with oil and vinegar, season with salt and pepper
  4. Grab a fork and dig in!
