Fish Burrito (Bowls)

Fish Burrito Bowl

One of the (many) positives of living on the Gold Coast is that we are surrounded by water.  The seafood is fresh and plentiful. Bonus points for friends with boats! One such friend recently shared his haul with us … winning!  More than 1kg of freshly caught Marlin. And the best bit? He filleted and sliced if for us too! I froze half and pulled it out during the week for a quick, easy and healthy meal the whole family was excited about!

Ingredients


500g firm, white Fish

½ cup Olive Oil

3 tbs Paprika

1 tbs Cumin

½ tsp Turmeric

Salt to taste

Salad Veggies of choice

Tortillas of choice

Greek Yogurt to serve

Squeeze of lime to serve

Fish Burrito Bowls

Method

  1. In a large bowl, mix together the spices, salt and olive oil to form a paste
  2. Add fish and coat well, set to one side
  3. Chop salad ingredients and arrange nicely on a platter
  4. Cook the fish on a hot BBQ or in a non-stick pan until white all the way through
  5. Remove and stand for 5 minutes, before chopping roughly
  6. Serve fish over salad ingredients and a dollop of greek yogurt and a squeeze of lime for a burrito bowl, or for those who can’t give up the wrap - load one up and enjoy!
