My children attend a ‘Nude Food’ school.  Which, in my opinion, is just as sexy as the name implies. I applaud the move to saving our planet of unnecessary waste as well encouraging healthier versions of the foods born of shelf-life-driven chemicals disguised as food.  And while I’m no saint when it comes to reaching for the easy option, I do dedicate some time to pre-preparing things that can be ‘thrown in’ the lunchbox as you dash out the door.


This one is inspired by a recipe given to me by the chef at my son’s kindergarten.  He was a master at addressing the various dietary requirements while keeping it interesting.  

I may have overindulged in the samples left at the front counter more than once!


Ingredients

2 Medium Bananas, mashed

3 cups Oats

3 tbs Tahini

3 tbs Rice Malt Syrup

¼ cup Goji Berries

¼ cup Sultanas

¼ cup Pepitas

¼ cup Sunflower Seeds

¼ cup Puffed Quinoa

¼ cup Puffed Rice


Method

  1. Mix all the ingredients together in a large bowl
  2. Press mixture evenly into a lined baking tray (40 x 25 cm)
  3. Bake for 25 minutes or until golden brown
  4. Let cool and then cut into 16 even ‘bars’
  5. Store in the fridge for up to 5 days

Tip: Ensuring the mixture is evenly spread over the tray will help to make sure it cooks evenly
