Spinach and Feta Fritatta

I love this time of year!  Loads of end of year celebrations, kids' functions, Christmas concerts, graduations ... basically lots of social life!

This recipe is my go-to for 'bring a plate to share' functions.  But I also whip it up when I've had no time to prep dinner ... and it goes well in school / work lunches the next day.

If I'm going to an event where there is a ton of junk on offer, at least I know that I've filled my (and my kids') belly with a bit of good stuff too!

 

Ingredients

125g Sheep / Goats Feta

250g frozen spinach

8 XL Free Range Eggs

Method

  1. Preheat oven to 180℃
  2. Place the spinach into a large microwave-proof dish and defrost on high for approximately 4 minutes (depending on microwave).  There should be no excess fluid 
  3. Add all the eggs and beat with a fork
  4. Crumble in the feta
  5. Poor into a 20cm x 30cm oven-proof dish lined with baking paper
  6. Bake for 30-35 minutes 
  7. Let cool and cut into bite-sized portions
