I froze half and pulled it out during the week for a quick, easy and healthy meal the whole family was excited about!

  • Veggie-Loaded Bolognese

    Who doesn’t love a good bolognese?  It’s hands-down my kids’ favourite! This is a variation on the recipe I learned to cook in Méribel, France with a dear friend of mine, Bichon.  I added a whole lot of veggies and simmer it in the slow cooker for most of the day - perfect for those crazy-busy afternoons when you just can’t fathom cooking.  
  • Simple Leftover Roast Salad

    When I roast a chicken, I always roast two.  Slightly more effort to prepare, same oven time, same clean up time, no fights over the thighs and plenty left over for lunches.  I also make sure I through in some pumpkin - I have a slight obsession with its versatility!
  • Pumpkin Pie Smoothie Bowl

    I do love a good smoothie for breakfast.  Quick, easy and full of nutrition - perfect for those busy mornings when you’re running out of the door with 10 bags, 3 kids and a “To Do” list as long as your left leg.  But sometimes it’s nice to sit down for 5 minutes and savour some ‘chewable’ food. This one is a good combo of both!
